Homemade lemonade

This is the wonderful family recipe of Emilia Le Roux in her book A farm in my heart. If you have a surplus of lemons on your trees this is  one good way to make use of them and get a lovely refreshing drink which you can sip after a hard days gardening or when you are chilling by the pool.

Lemon syrup

Grate off the rinds.

Squeeze the juice out.

Measure the juice and pour it into a saucepan along with the rind and the equivalent amount of sugar to the juice.

Heat to just below boiling point, but don’t let it boil. Stir to dissolve the sugar.

Lemonade

Mix four parts ice water with the lemon syrup.

Add crushed ice

Add borage leaves or mint
